- ¼ cup roasted sunflower or pumpkin seeds (pepitas)
- 1 (15oz) can cooked lentils, drained and rinsed*
- 1 avocado, cut into cubes
- 2 Tablespoons extra virgin olive oil
- 1 Tablespoon balsamic vinegar
- 1 teaspoon reduced sodium soy sauce
- 2 dark chocolate bars (60-70% cacoa)
- 16 oz strawberries (about 20-25), long-stemmed if available
- ½ cup heaping pistachio kernels, chopped finely
