Ingredients

• 2 tablespoons olive oil
• 3 dried guajillo peppers, stemmed and torn
• 1 medium white onion, diced
• 2 tablespoons tomato paste
• 4 cloves minced garlic
• 2 medium tomatoes, roughly chopped
• 4 cups chicken broth, divided
• 3 medium carrots, cut into 1/4” coins
• 2 teaspoons chili powder
• 1 teaspoon chipotle pepper powder
• Salt and pepper
• 1 can pinto beans, drained and rinsed
• 1/2 cup PET® heavy cream
• 4 cups shredded cooked chicken
