• 1 pound bulk pork sausage
• 1 small onion , chopped fine
• 3 cups shredded extra-sharp cheddar cheese
• 12 large eggs , lightly beaten
• 4 cups whole milk
• 1 1/2 teaspoons salt
• 1 teaspoon pepper
• 1 tablespoon hot sauce (see note)
