• 1 cup plain flour (all-purpose flour)
• 2 eggs, lightly whisked
• 1cuppanko breadcrumbs
• 8 pieces thick white bread
• 2 tbsp Kewpie mayonnaise
• ½ cup finely sliced white cabbage, plus extra to serve
• vegetable oil for shallow frying
• sea salt
• Lemon sauce
• ¼cup chicken stock
• 1 tbsp soy sauce
• 4tbsp sugar
• 2tbsp lemon juice
• finely grated zest of½lemon
• 1 tbsp vegetable oil
• 1garlic clove, finelygrated
• 2 tsp cornflour (cornstarch), dissolved in 2 tbsp water
