• 1/4 cup (60 ml) reserved pasta water, plus more as needed
• 1 tablespoon olive oil
• 1 lb (450 g) lean ground beef
• 1 small yellow onion, finely chopped
• 3 cloves garlic, minced
• 1 teaspoon Italian seasoning
• 1/2 teaspoon fine salt
• 1/4 teaspoon black pepper
• 1 jar (24-28 oz / 680-790 g) marinara sauce
• 1 cup (115 g) shredded mozzarella cheese
• 1/4 cup (25 g) freshly grated Parmesan cheese
• 2 tablespoons chopped fresh parsley, optional
