Ingredients

  • 1/3 cup sugar
  • 2 tablespoons Killer Hogs AP Rub (or your favorite rub)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon ground chipotle pepper
  • 1 teaspoon ground ancho chili pepper
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 sweet onion
  • 1 poblano pepper
  • 1 red bell pepper
  • 24 ounce can diced tomatoes
  • 4 pounds smoked chuck roast (or smoked brisket, cut into bite-size pieces)
  • 1 pound spicy hot breakfast sausage (chopped)
  • 3 chipotle peppers in adobo sauce (chopped)
  • 4 cloves fresh garlic (minced)
  • 1 quart beef stock
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons hot sauce
  • 2 tablespoons tomato paste
  • 14 ounce can chili beans ((optional))
