- Finely grated zest and juice of 1 small lemon
- 1 egg
- 5ml salt
- 5ml milled black pepper
- 100g dried apricots, chopped
- 1 Granny smith apple peeled, cored and finely chopped
- 60ml sultanas
- 250ml beef stock
- Filo pastry
- Egg white for sealing samoosas
