- 2 medium sweet potatoes, peeled and cubed (1/2 inch cubes)
- 1 cup corn kernels, fresh or frozen (defrost if using frozen)
- ½ cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- 2 teaspoons real maple syrup
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- ¼ teaspoon cayenne pepper
- 1 teaspoon coarse salt
- 2 cups cooked black beans (or 15-oz, rinsed and drained)
- 2 green onions (scallions), sliced thinly
- 1 cup roasted, salted peanuts, chopped
- 2 cloves garlic, minced
- 3 tablespoons fresh lime juice
