Ingredients

• 1 tablespoon of butter
• 2 winter carrots, sliced
• 1 leek, in rings
• 1/2 celeriac, in small cubes
• 1 onion, in rings
• 1 bay leaf
• 1 garlic clove, pressed
• 4 slices of smoked bacon
• 200 ml (Dancing Cats) beer
• 1 bunch of celery, finely chopped
• 1 litre meat stock
• pinch of nutmeg
• salt and pepper
