Ingredients

• 2 tablespoons Fustini's Herbs de Provence olive oil
• 1 small yellow onion, finely chopped
• 3 tablespoons all-purpose flour
• 1 teaspoon paprika
• 1 1/2 cup whole milk
• 2 cups diced ham
• Kosher salt and freshly ground black pepper
• 2 lb. potatoes, sliced into 1/4" rounds
• 2 cups Swiss cheese (sliced or shredded)
• freshly chopped chives for serving
