Ingredients

  • 1 7 ounce white or light tuna in water drained
  • 8 ounces cream cheese room temperature
  • 1/2 cup mayonnaise or plain yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon horseradish
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1 small jalapeno seeds removed and diced finely may substitute 1/2 teaspoon cayenne pepper
  • 3 green onions diced both green and white portion of onion
  • 1 cup marinated artichokes, coarsely chopped optional
  • 1/2 cup grated parmesan, plus 2 T for topping
  • 3/4 cup grated sharp or medium cheddar cheese
  • 1 medium tomato seeds removed and diced
  • 1 teaspoon paprika for topping
  • In a medium mixing bowl, add the tuna (drained) and using a fork break into small pieces. Add cream cheese, mayonnaise, mustard, horseradish, salt, and pepper. Mix thoroughly.
  • Add jalapeno, onions, artichoke, if using, and both cheeses. Fold in the ingredients evenly. Add the diced tomatoes and gently fold in until mixture is thoroughly combined.
