Ingredients
- Dough Ingredients (with plain-English notes)
- 2 ½ cups (300g) all-purpose flour, plus a little extra for dusting
- 1 tablespoon active dry yeast
- ¼ cup (50g) granulated sugar
- 1 teaspoon baking powder (This small amount helps the buns achieve an extra soft, fluffy texture and a whiter appearance, typical of steamed buns.)
- ½ teaspoon salt
- ½ cup (120ml) warm water (105-115°F / 40-46°C)
- 2 tablespoons neutral oil (like vegetable or canola oil)
- Char Siu Pork & Filling Ingredients
- 1.5 lbs (680g) pork shoulder/butt, cut into 1-inch cubes (Pork shoulder has the perfect fat-to-meat ratio for tender, flavorful char siu.)
- ¼ cup soy sauce
- ¼ cup hoisin sauce
- 2 tablespoons honey or brown sugar
- 1 teaspoon Chinese five-spice powder
- 2 cloves garlic, minced
- 2 tablespoons Shaoxing wine (or dry sherry, or even chicken broth as a practical substitute)
- 1 tablespoon cornstarch, mixed with 2 tablespoons cold water (for cornstarch slurry) (This creates that signature glossy, slightly thick filling sauce.)
- Optional: A few drops of red food coloring (for the classic char siu "red" look, purely aesthetic)
- 1 tablespoon neutral oil (for cooking filling)
- Optional for Serving Sliced green onions
