  • Layer: In baking, a layer refers to one of the individual sections of a multi-tiered cake. Layer cakes are made by stacking several cake layers with icing or filling in between.
  • Crumb Coat: A crumb coat is a thin layer of icing applied to a cake and refrigerated, before adding the final coat. It helps seal in crumbs and create a smooth surface for decorating.

  • Sift the Cocoa Powder for a Smoother Batter: Cocoa powder can sometimes be lumpy. Sifting it before mixing helps create a smoother cake batter and a fluffier texture.
  • Don’t Overmix the Batter: Overmixing can make the cake dense instead of light and fluffy. Stir just until the ingredients are combined - lumps are fine!
  • Use the Right Tin Size: Using the wrong cake tin can affect baking time. If the tin is too small, the cake may take longer and dry out.
  • Let the Cake Cool Before Icing/Frosting: If you ice the cake while it’s still warm, the icing will melt and slide off. Let it cool completely before adding buttercream, ganache, or any other topping.
