Recipe : BBQ Chicken Skewers

Ingredients

• 4 portions chicken breast from Hudson Meats
• Aphrodite Feta from Hudson Meats
• 1 tbsp Hardcore carnivore rub -red from Hudson Meats
• 1⁄2 cup Yoghurt
• 4 tbsp Olive oil
• 6 cloves minced garlic
• 3 tsp dried mixed herbs
• 1 red capsicum cut into1/2 inch chunks
• 1 green capsicum cut into1/2 inch chunks
• 1 large red onion cut into1/2 inch chunks
• 100g baby Spinach
• 100g cherry tomatoes sliced
• 1⁄2 red onion thinly sliced
• 2 tbsp olive oil
• 2 pesto of choice
• Salt
