Ingredients
- 3 whole whiting or firm white-fleshed fish, scaled, gutted and patted dry
- 3 tbsp crispy chilli oil, plus extra to serve
- A generous pinch of salt
- A few cracks of black pepper
- 150g salted butter, divided into 3 portions
- Zest of 1 lemon
- Fresh, clean kelp, such as golden kelp
- A drizzle of good-quality olive oil
- Extra lemon zest, to garnish
- Optional, fresh lemon wedges and crusty bread to serve
