Italian Cream Cake - Southwest Dairy Farmers

Ingredients

• 2 cups flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup butter
• 2 cups sugar
• 5 egg yolks (reserving egg whites to beat)
• 1 teaspoon vanilla
• 1 cup buttermilk
• 1 cup coconut
• 1 cup chopped pecans or walnuts
• Icing ingredients
• 1 cup butter (softened)
• 8 ounces cream cheese (softened)
• 1 pound powdered sugar
• 1/2 cup chopped pecans or walnuts to sprinkle on top
• optional 1-2 cups toasted coconut to sprinkle on top or sides
