Ingredients

  • 8-10 pcs Chicken Drumsticks (if bone in, score the meat for even cooking) (Chicken Thighs work even better, bone-in or out)
  • 4 tbls Sake
  • 4 tbls Soy Sauce or Tamari
  • 2 tsp Mirin
  • 2 tsp Fresh Grated Ginger
  • 2 tsp Fresh Grated Garlic
  • 1 tsp Sesame Oil
  • Salt and White Pepper to taste
  • 1 c + 2 tbls Potato Starch (Bob's Red Mill makes a great one. Sub corn starch if you can't find it.)
  • 1 c +2 tbls Glutinous Rice Flour (Can't find sticky rice flour? Non-sticky is fine.)
  • 1 tsp Baking Powder (We use Alsa, an asian grocery secret find)
  • 2 lrg Eggs (Nellie's Free Range is our fav!)
  • 1-2 qts Neutral Oil for frying
