Slow-cooker dried apricot and peach chicken - Astral Chicken

Ingredients

• 8 chicken legs
• 1 onion, thinly sliced
• 1½ cups (375ml) dried apricots
• ¼ cup (60ml) soy sauce
• 1 Tbsp (15ml) Dijon mustard
• 1 Tbsp (15ml) garlic
• 1 Tbsp (15ml) fresh ginger, minced
• ¼ cup (60ml) honey
• 1 lemon, juiced
• 2 cups (500mL) chicken stock
• 1 glass of white wine
• 2 Tbsp (30ml) parsley, chopped
• salt and pepper
