• 1/4 tsp (4 ml) yellow curry powder
• 1 pound (500 g) bonless skinless chicken breasts
• 2 medium sweet potatoes, cut into 1/2-inch (1-cm) pieces
• 1 cup (250 ml) water
• 1 tbsp (15 ml) Gourmet Garden Chunky Garlic Stir-In Paste
• 1 tbsp (15 ml) Gourmet Garden Ginger Lightly Dried
• 1 tbsp (15 ml) finely chopped fresh jalapeno pepper
• 2 tbsp (30 ml) Gourmet Garden Cilantro Lightly Dried, divided
• 2 tbsp (30 ml) balsamic vinegar
• 1 package (142 g) baby kale or spinach
