POTATO SALAD WITH BACON – Dads That Cook

Ingredients

• 3 lbs Yukon Gold or red potatoes, cut into 1" pieces
• ¼ cup diced, roasted sweet onion (roasted ours in the air fryer)
• 1 cup mayonnaise
• ¼ cup Dijon mustard
• ⅛ cup chopped fresh chives
• ¼ cup chopped fresh parsley
• 6 slices bacon, cooked until crisp and chopped
• 4 hard boiled eggs, peeled and sliced
• ½ tsp ground black pepper
• ½ tsp kosher salt
