Cod Fish Cakes – Narragansett Beer
The other day we all went to Jillian's Sports Bar in Somerset, MA for lunch. Being near Fall River I was really in the mood for some Portuguese style codfish. L
Ingredients
- * 2 large red potatoes, cut into quarters
- * 1 pound cod fillets, cubed
- * 1 tablespoon butter
- * 1 tablespoon grated onion
- * 1 tablespoon chopped fresh parsley
- * 2 cloves of garlic
- * 1 egg
- * 3 tablespoons extra virgin olive oil for frying
- * salt and pepper to taste
