Velvet Cauilflower Soup – foodcentric

Ingredients

• 1 tablespoon oil
• 50g butter
• 1 large onion, finely chopped
• 1/2 large cauliflower, chopped
• 2 cloves garlic
• 2 potatoes, peeled and chopped
• 750ml chicken or vegetable stock
• 1/2 -1 cup milk
• sea salt, to taste
• cream and fresh thyme, for garnish
