Summer One Pot Chicken Pasta with Lemon, Leek and Spinach

• San Remo Casarecce No. 89 500g
• 500g chicken thigh, diced into small pieces
• 50g butter
• 2 tbsp olive oil
• 1 tsp dried thyme or 6 sprigs fresh thyme
• 1 large leek, green top removed, washed and finely diced
• 1 brown onion, diced
• 3 cloves garlic, minced
• 5 cups chicken stock
• 4 cups baby spinach
• 1 cup parsley
• 1 lemon – peel (3 strips) and juice
• 150g fetta
