Spicy Cole Slaw | Alstede Farms

Ingredients

• 1 small head of green cabbage, finely shredded
• 2 c fresh/frozen corn kernels
• 3 roasted red bell peppers, coarsely chopped
• 3/4 c coarsely chopped fresh flat leaf parsley or cilantro
• 1/4 red wine vinegar
• 1/3 c extra virgin olive oil
• 1 T ground cumin
• 1 – 2 jalapeno pepper finely chopped (leave in seeds and ribs for more heat)
• Sea salt
