- 1 small head of green cabbage, finely shredded
- 2 c fresh/frozen corn kernels
- 3 roasted red bell peppers, coarsely chopped
- 3/4 c coarsely chopped fresh flat leaf parsley or cilantro
- 1/4 red wine vinegar
- 1/3 c extra virgin olive oil
- 1 T ground cumin
- 1 – 2 jalapeno pepper finely chopped (leave in seeds and ribs for more heat)
- Sea salt
