Ingredients

  • 4 pork "porterhouse steaks" or loin chops (each 1 inch thick and 10 to 12 ounces)
  • 1 cup apple cider
  • 4 tablespoons Asian (dark) sesame oil, walnut oil, or olive oil
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 strips lemon zest (each about 2 by 1/2 inch; see note)
  • 2 tablespoons fresh lemon juice
  • 8 fresh sage leaves, or 1 teaspoon dried sage
  • 2 scallions, white parts gently crushed with the side of a cleaver, green parts finely chopped
  • 2 cloves garlic, peeled and gently crushed with the side of a cleaver
  • 2 slices fresh ginger (1/4 inch thick), peeled and gently crushed with the side of a cleaver
  • 2 tablespoons unsalted butter
  • coarse salt (kosher or sea) and freshly ground black pepper
