• 2/3 pound skim mozzarella, grated, 1/4 cup reserved
• 3/4 cup skim ricotta cheese
• 1/2 cup chicken stock
• 1/2 cup Pecorino Romano cheese, finely grated, 1/4 cup reserved
• 1 teaspoon salt
• 1/2 teaspoon ground pepper
• 3 tablespoons breadcrumbs
