Cardiff Mum's Peppercorn Chicken Meatballs with Garlic Mash Recipe

Ingredients

• 4 large or 6 medium potatoes, peeled and diced
• salt and pepper
• 12 chicken meatballs
• 1 tsp garlic powder
• 2 tsp dried thyme olive oil
• 1 white onion, chopped
• 2 cloves of garlic, minced
• 200g white mushrooms, quartered
• 200ml chicken stock
• 1 tbsp whole peppercorns
• 1 tsp cracked black pepper (or less, depending on your taste)
• 2 heaped tbsp mascarpone cheese
• 1 tsp Dijon mustard
• 1 tbsp Worcestershire sauce
• a handful of fresh parsley leaves, chopped
• a splash of milk
• a knob of butter for the mash
