• 7 sprigs thyme
• 2 tablespoons hot water
• juice of 1/2 lemon (or about 1 and 1/2 tablespoons Heaven & Earth Lemon Juice)
• 1 (12-ounce) bottle ginger beer (such as Reed’s)
• 2-3 ounces Boondocks Bourbon, optional (if you want to make it alcoholic)
