Romesco Sauce – Borgatti's

Ingredients

• 16 oz jar roasted red peppers, drained and rinsed
• 2 Roma (plum) tomatoes, roughly chopped
• 3 cloves garlic, roughly chopped
• 1 tbsp red wine vinegar
• 1⁄4 cup olive oil
• 1⁄4 cup roughly chopped parsley
• 1⁄4 tsp cayenne pepper
• 2 tsp smoked paprika
• 1 cup almond flour
• salt and pepper to taste
• 1 lb Borgatti's whole wheat spinach fettuccine
• extra olive oil, finishing salt, and eggs for garnish
