We are not such big fans of creamy soup, I cook from time to time, but it's not our family favourite. But this version, with meatballs, is absolutely brilliant
Ingredients
- ● Pumpkin 700 g can be replaced with simple potatoes or sweet potatoes
- ● Zucchini 1 piece
- ● White onion 2 pieces
- ● Garlic cloves 4 pieces
- ● Butter 30 g
- ● Extravirgin olive oil 50 ml
- ● Beef/pork meat 600 g or chicken/turkey - preferably, a bit fatty
- ● Eggs 1 piece
- ● Heavy cream (32% fat) 200 ml
- ● Chopped parsley 2 tbsp
- ● Salt 2 tbsp
- ● Ground black pepper 0.25 tsp
- ● Pumpkin seeds 100 g optional, for serving and decor
