This Taiwanese braised pork belly is sometimes referred to as lu rou fan, which usually includes five-spice powder, maybe star anise and less sugar. This version uses a tasty, fattier cut of pork.
Ingredients
- 2 pounds (900 grams) skin-on boneless pork belly
- 1 tablespoon canola or soybean oil
- 3 garlic cloves, left whole
- 2 1/2 cups water
- 1/2 cup fried shallots (store-bought)
- 1/2 cup plus 3 tablespoons soy sauce
- 2 1/2 tablespoons coarse raw sugar, such as demerara
- 2 tablespoons Taiwanese soy paste
- 2 tablespoons Taiwanese rice wine (michiu) or cooking sake
- Cooked short-grain rice for serving
- Ground white pepper
