  • 1 cup black beans*
  • 1/2 cup chopped tomatoes
  • 1/2 cup green bell pepper
  • 1/4 yellow bell pepper
  • 1/4 cup diced red onion
  • 1 tbs fresh cilantro, diced (or 1 tsp dried)
  • 1 tsp lime juice, optional
  • 1/2 tsp chili powder
  • 1/4 tsp garlic granules
  • 1/4 tsp sea salt
  • 1/4 tsp cumin
  • 1/4 cup chopped scallions (for garnish)
  • 1/2 cup chipotle sauce (recipe below)
  • 1/4 cup cashew sour cream (recipe below)
  • 1 cup sweet potato* (removed from skins)
  • 1/2 cup cashews (soak for 4 hours, optional)
  • 3/4 cup water
  • 1 small chipotle pepper, roughly chopped (or 1/2 tsp ground chipotle powder)
  • 1 (1/8″) slice onion (or 1/4 tsp onion powder)
  • 1 clove garlic (or 1/2 tsp granules)
  • 1 tsp lemon juice
  • 1 tsp paprika
  • 3/4 tsp sea salt
  • 1 cup cashews (optional to soak 4 hours)
  • 1/2 cup water
  • 1 tbs tahini
  • 1 tbs lemon juice
  • 1 tsp apple cider vinegar
  • 1/2 tsp sea salt
