- 2tbsp olive oil
- 1 red onion, finely chopped
- 4 garlic cloves, finely chopped
- 2 x 400g tins Italian whole cherry tomatoes
- 1 tbsp tomato purée
- 1 tsp caster sugar
- 3 sprigs parsley
- ***For The Filling
- 250 g ricotta cheese
- 2 tbsp basil, chopped
- 2 tbsp flat-leaf parsley
- 1 tbsp olive oil
- 350 g spinach, washed
- A little grated nutmeg
- 250 g lasagne sheets
- 2 x 210 g balls of mozzarella, cut into small cubes
- 75 g parmesan, grated
