Coconut Cake

Ingredients

• 1 - 1 1/2 cups cane sugar (add less if you want it to be less sweet)
• 1 1/2 teaspoons baking soda
• 1 teaspoon baking powder
• 3/4 teaspoon salt
• 2 teaspoons ground flaxseed + 2 tablespoons water
• 2 cups dehydrated finely grated coconut
• 1 1/2 cups non-dairy milk
• 1/2 cup vegetable oil, OR melted coconut butter
• 1 tablespoon lemon juice or apple cider vinegar
• 1 teaspoon coconut or vanilla essence
• 1 cup unsalted coconut butter
• 1 can of condensed coconut milk
• 1 teaspoon vanilla
• 1/4 teaspoon salt
• Shredded coconut to garnish
