Pasta Carbonara with alder chip smoked carrion and kale

Ingredients

• 100 g cream
• 2 cups cream
• 1 egg yolk
• Salt
• 75 g butter
• 1 cup coarsely chopped hazelnuts
• 1 tbsp coarsely chopped garlic
• 1 shallot
• 200 g of kale
• 150 g of alder chip smoked carrère
• 1 pot of thyme
• Butter and canola oil for frying
• Salt and black pepper to taste
• 500 g of pasta of any variety
