Silverbeet, Tomato and Feta cheese Frittata – Misfit Garden

Ingredients

• 8 large eggs
• 1/2 cup of milk
• 1/2 teaspoon of salt
• a few twists of fresh ground pepper
• 2 cups of silverbeet cut into pieces
• 2 ripe garden tomatoes diced or sliced, your choice!
• 1 small red onion
• 3/4 cup of feta cheese, crumbled
• 1 cup grated cheddar cheese
• Handful of any fresh herbs (parsley, basil, oregano, thyme)- optional
• 1/4 cup of olive oil
