Lobster Tournedos

Ingredients

• 4 lobster tails, (from whole 1.5-pound lobsters)
• 4 slices Noskey bacon (thin-sliced bacon)
• 2 tablespoons grapeseed oil
• 1/2 cup butter
• Salt and white pepper as needed
• Butcher’s twine
• 1/2 cup port wine
• 1/4 cup chicken stock
• 2 cups crème fraiche
• 1 cup foie gras, small dice
• 1 black truffle, finely minced
• 1 oz. butter
• 1 lemon
• 1/4 cup grapeseed oil (or any neutral oil) or more Lobster shells
