Easy Instant Pot® White Bean Chili – Mary's Delishes LLC

Ingredients

• 1 tablespoon olive oil
• 2/3 cup finely chopped onion, about 1 small
• 4 garlic cloves, minced
• 3 (14 ounces) cans white beans like Great Northern or cannellini beans, drained, rinsed and patted dry with paper towel
• 5 cups shredded cooked chicken (about 1¼ pounds)
• 3 cups vegetable stock or chicken stock
• 1 (19 ounce) can mild green enchilada sauce
• 1 can or bag (12 ounce) frozen fire-roasted or yellow corn kernels
• 1 cup diced red bell pepper
• 1 (4 ounce) can green chilies, drained
• 1 ½ teaspoons cumin
• 1 ½ teaspoons chili powder
• A pinch of cayenne pepper, optional if you want more heat!
• ½ teaspoon salt
• A grind of black pepper
• 2 tablespoons lime juice, about 1 lime
• 1 jalapeño pepper, seeded and thinly sliced
• Sour cream or plain Greek yogurt
• 1 avocado, diced
• Crispy tortilla strips
• Cotija cheese
• Chopped fresh cilantro
