Modernmeal Vegan Shepherd's Pie

Ingredients

• 2 medium Onions, diced
• 3 cloves Garlic, minced
• 1 ½ cups Uncooked Brown or Green Lentils, rinsed and drained
• 4 cups Vegetable Stock
• 2 Tbsp Fresh Thyme or 2 tsp dried Thyme
• 10 oz bag Frozen mixed Veggies: Peas, Carrots, Green Beans, thawed and drained
• 3 lbs Yukon Gold Potatoes, cut in half, lengthwise
• 3-4 Tbsp Vegan Butter, Coconut Manna or Olive Oil
• To taste Salt and Pepper
