West African Peanut Soup | Planters Canada

Ingredients

• 2 cups onions, chopped
• 1 tbsp Planters Peanut Oil
• ½ tsp cayenne
• 1 tsp peeled ginger root
• 1 cup carrot, chopped
• 2 cups sweet potatoes, chopped (or use 1 cup white potatoes)
• 4 cups vegetable stock (or water)
• 2 cups tomato juice
• 1 cup Planters Peanut Butter, Smooth
• 1 cup scallions, chopped (or chives, chopped)
• ½ cup Planters Cocktail Peanuts, chopped
• 1 tbsp sugar (optional)
