Ingredients

• 2kg mild-cure gammon joint tied
• 1 onion roughly chopped
• 1 tbsp black peppercorns
• 1¾ litres cola (or enough to cover the gammon)
• 1 tbsp english mustard powder
• 2 tbsp soft dark brown sugar
• 4 tbsp runny honey
• pinch of ground cloves (optional)
