Hokey Pokey is a wonderful, yet simple honeycomb style treat from New Zealand. Either eat it as it is, dip in melted chocolate, or crumble it up and sprinkle over ice cream.

- 2 tsp bicarbonate of soda
- 80g butter
- 160g (3/4 cup) caster sugar
