Lemon Cakes with Roasted Strawberries | White Wings
Best served warm with Greek style yoghurt and roasted strawberries, these little lemon cakes are a great dessert or a sweet snack.
Ingredients
- 2⁄3 cup (110g) almonds
- 2⁄3 cup (100g) White Wings Wholemeal Plain Flour
- 2 free-range eggs
- 1/3 cup (75g) CSR Caster Sugar (superfine)
- ¼ cup (90g) rice malt syrup
- 3 teaspoons finely grated lemon rind
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- ½ teaspoon baking powder
