Ingredients

• 4 Tbsp. butter
• 1 medium onion, coarsely chopped
• 3 celery stalks, coarsely chopped
• 2 large poblano chilies, seeded and chopped
• 1 red bell pepper
• 1 can diced tomatoes
• 1 (16 oz.) pkg. frozen white corn kernels
• 2 (14 oz.) cans low salt chicken broth
• 1 c. half and half
• 2 tsp. sugar
• 1/2 tsp. cayenne pepper
• 2 chicken breasts
• 1 can cream-style corn
• 6 Tbsp. fresh cilantro, chopped
• 1 c. or more sharp Cheddar cheese
