Levi Roots' sweet potatoes with spicy sausage recipe

Ingredients

• 2 Large sweet potatoes, about 300-350g each
• 40 g Butter
• 2 Spicy pork sausages, chopped into 2cm chunks
• 0.5 Small onion, finely chopped
• 1 Red chilli, deseeded and finely chopped
• 30 g Cheddar cheese, grated
• 1.5 tbsp Fresh coriander, roughly chopped (optional)
• 1 pinch Salt and black pepper
• 2 Small eggs
• 1 pinch Cayenne pepper, to garnish
