Ceviche Inspired Salad with Courgette and Peach - Good Eatings

Ingredients

• 1 jalapeno pepper, finely chopped
• The juice from 3-4 limes and the zest from 1-2 of them, depending on the size
• 1 tbsp extra virgin olive oil
• A good pinch of salt
• 2 courgettes, finely sliced
• 2 peaches or nectarines, finely diced
• 1 tomato or 6-8 cherry tomatoes, finely diced
• 2 inch piece cucumber, finely diced
• 1 avocado, finely diced
• 1 small red onion, finely chopped
• A large handful coriander, finely chopped and extra whole leaves for decorating
