Chicken Stuffed Peppers - Bell & Evans

Ingredients

• 1 lb. Bell & Evans Ground Chicken
• 6 large Mixed-color bell peppers, tops removed and seeded
• 2 TB Dry taco seasoning
• Salt and black pepper, to taste
• 1 TB Olive oil
• 1 medium Yellow onion, chopped
• 2 TB Tomato paste
• 3 Cloves Garlic, minced
• 1 tsp Chili powder
• 1 tsp Ground coriander
• 1/2 tsp Paprika
• 1 (15-oz) can Black beans, rinsed and drained
• 1 (14.5-oz) can Diced tomatoes
• 1 cup Corn kernels, fresh or frozen
• 1 cup Cooked long-grain white rice
• 1 cup Shredded Monterey Jack cheese
• 2 TB Chopped fresh parsley
