Ingredients

• 1 lb. Bell & Evans Ground Chicken
• 2 TB Dry taco seasoning
• 2 TB Olive oil
• 1 large Yellow onion, chopped
• 1 cup, Russet potato, peeled, cut into 1/4-inch dice
• 1 cup Chopped red bell pepper
• 1 cup Frozen peas
• 1/2 cup Shredded cheddar cheese
• 1 large Egg, beaten
• 2 10-oz packages Frozen empanada dough for turnover pastries (like Goya)
• 1/4 cup Fresh cilantro, chopped
• 1 cup Guacamole
• 1/2 Red onion, finely chopped
• 1 cup Sour cream
