Frog Eye Salad - Chefwiz

Ingredients

• 1 ¾ cups of pineapple juice (unsweetened)
• 1 cup of white sugar
• 2 beaten eggs
• 2 tablespoons of all-purpose flour
• 2 ½ teaspoons of salt (divided)
• 1 tablespoon of lemon juice
• 1 tablespoon of vegetable oil
• 1 package (16 ounces) of acini di pepe pasta
• 3 cans (11 ounces each) of mandarin oranges (drained)
• 2 cans (20 ounces each) of pineapple tidbits (drained)
• 1 can (20 ounces) of crushed pineapple (drained)
• 1 container (8 ounces) of thawed whipped topping
• 1 cup of miniature marshmallows
• 1 cup of shredded coconut
